Whisk the white chia ingredients (2 tbsp chia seeds, 5 oz non-dairy yogurt) in a bowl until well combined. Layer this mixture into your cup and add quinoa crispies. Next, whisk the blue chia ingredients (5 oz non-dairy yogurt, 1 tbsp white chia seeds, 2 tbsp Matcha powder) together until you achieve your desired blue color. Add the blue chia pudding on top of the quinoa crispies. Finally, top the parfait with a thin layer of non-dairy yogurt, more quinoa crispies, blueberries, and a blue flower for garnish.
