First, prepare your raw cashews by soaking them for about 7 hours. Preheat your oven to 350 degrees Fahrenheit. Blend all of your brownie ingredients until smooth and pour into a greased pan or a pan lined with parchment paper. Bake the brownie crust for 35-40 minutes. Check with a toothpick to ensure it comes out clean. While the brownie crust is baking, prepare the Banana Cheesecake by blending all cheesecake ingredients until smooth. Once the brownie crust has cooled, spread the cheesecake batter on top. Reduce oven temperature to 300 degrees Fahrenheit and bake for another 20-25 minutes (baking time may vary depending on your oven). While the cheesecake brownie cools, prepare the Peanut Butter Frosting: blend PB2, avocado, powdered sugar, almond milk, and pure vanilla extract until smooth and creamy. If the frosting is too thick, add a little more almond milk. Once the cheesecake brownie has fully cooled, add the peanut butter frosting to the top and decorate with any of your favorite toppings.
